Identification of ?-carotene oxidation products produced by bleaching clay using UPLC-ESI-MS/MS

The removal of plant pigments such as ?-carotene is an aspect vegetable oil processing often desired by the food and pharmaceutical industries. Adsorption to acid-activated clay (AAC) a well-established method for purification. Despite this, mechanism not well understood. UPLC-MS/MS analysis surface compounds extracted from ?-carotene-AAC (BC-AAC) complexes show that AAC acts oxidiser. Oxidation products detected included canthaxanthin 3?,4?-didehydro-?-caroten-4-one. had water exchanged with 18O labelled was then exposed ?-carotene. Carotenoids were produced this reaction, suggesting necessary removal.
